Blueberry Tofu Smoothie
Blueberries are a great source of anthocyanin, an antioxidant that gives the luscious purple colour in the skin of the berries. When blended, the powerful phytonutrients in blueberries is more easily absorbed by our body.
INGREDIENTS – SERVES 1 ADULT
120g Blueberries (fresh, if unavailable use frozen)
300g Banana
1/3 box Silken Tofu
1 tbsp Ground Flaxseed
200ml Filtered Water
DIRECTIONS
1) Place all ingredients into a high-speed blender and blend for 30 seconds until a smooth consistency.
2) Pour smoothie in a glass and decorate with fresh herbs and lemon.
3) Serve immediately!
